Healthy Yet Decadent Purée

A recipe which is a tasty alternative to the boring mashed potatoes.


A microwave and a blender (Magic Bullet) are used.
  • 1/2 cup asparagus buds
  • 1 1/2 cup of diced plantain (one fruit)
  • 1 clove of garlic
  • 2 tablespoons of cut fresh basil
  • 3/4 cups of chicken stock
  • 1/2 cup of cream (or milk)
Microwave diced plantain on high for 2 min or until soft and sweet like banana.

Cut asparagus buds by breaking off the stems, thus it will come off at the right spot.

Mix asparagus, chopped garlic, cut basil and the chicken stock and cook in the microwave on high for 2 minutes, interrupting when overboils or longer on lower power setting, until the asparagus breaks with a spoon, but not too soft.

Add cream to the cooked asparagus and blend 2-3 burst of 2-3 seconds, just to break the asparagus into small even pieces. Taste and add salt if necessary.

Add cooked plantain to the asparagus smoothie and continue blending for another couple of 2-3 second bursts until plantain is integrated evenly.
